Okara Corn Bread

A very moist, yummy corn bread, almost pudding like inside a crispy crust. Will need to bake a little longer than you would expect due to the extra moisture from the okara. FYI: This cornbread is designed to be nearly dairy free. Some people with dairy intolerance can tolerate baked kefir and ghee. Kefir is a fermented milk product in which the lactose is mostly digested by the fermentation organisms. Ghee is easily made by heating butter until all the milk solids contained in it separate out and can be strained away. The resulting clear, golden butterfat is free of lactose and will keep several months at room temperature, or indefinitely in the refrigerator.



Okara Almond Bread

Very tasty loaf of gluten free bread. The Okara makes the dough very moist, requiring a longer than normal baking time.



Broccoli Main Dish

Can be used as a main dish, though if so it needs a supplemental protein food added to the meal. The serving size is fairly large, in keeping with a high vegetable intake diet. When using as the main dish, add one of the following to the meal for protein: chopped, pre-cooked chicken meat, Parmesan cheese, chopped almonds, or serve eggs on the side.



Baba Ganoush

I use more olive oil in my recipe than is typical since my goal is to get at least 30% of my calories from unsaturated fats. I roast my eggplants before I freeze them in garden season. This dish may actually taste better with a day or two to age.
