Crawfish / Shrimp Etouffee

Very good Etouffee. I like the Shrimp added into this recipe. Feel free to add more or less, but this is works for my family. I make it just like this and we still have food left over after a 35 year old (me), my 16 year old son (6'4" 190 lbs), 10 year old son (who eats like he's starving, especially when this is on the table), 3 year old son, and my wife. No real measuring for me either, so the measurements I give you will be an estimate.



Spice-Rubbed Pork Tenderloin w/Roasted Carrots

Pork tenderloin goes perfectly with sweet baby carrots. The bags of machine-cut "baby" carrots contain too much moisture and won't roast nicely. Instead, use true baby carrots or larger carrots cut into long, slender fingers about the size of young carrots
