Moroccan Meatloaf adapted from SimplyRecipes.com. Changes: 1) Half-recipe for a smaller loaf (4-cup loaf pan; about 8"X4"); 2) Sub less expensive meats for lamb; 3) sub oatmeal for bread crumbs; 4) increased amount of mint and veggies. Be generous with the dried spices for best results. Makes a VERY FLAVORFUL meat loaf! See website for pomegranate sauce if you like.



Eggplant & Lentil Moroccan-ish stew

Originally from Simplyrecipes.com, this is a cheaper but still delicious version with honey used instead of pomegranate molasses. A little spicy and superb both warm and cold with bread or couscous. When cooking, do NOT mix; allow layers to remain as-is, and simmer very slowly for 1.5-2 hours for yummiest results.
