V's Rice Pilaf

Rice Pilaf to go alongside curries and the like.



Chocolate chip chickpea flour cookies by Arjun

Maybe you've got an intolerance to wheat, or you want some Indian flair, or you just want a healthier alternative to white flour. Chickpea flour is exceptionally healthy-- 8 times as much fibre, and twice a much protein. Chickpea flour does have a little bit of sugar in it, though, so I've reduced the amount of sugar called for in the recipe. These cookies are sweet, but not "too sweet", so they'll appeal to adult taste buds. In this recipe, you probably won't even notice it's not wheat-- the cookie texture comes out *perfect* (soft, chewy, rises exactly like my white flour version), and there's nothing in the flavour to let your guests know that it's not wheat. I thought it would come out weird, but it tastes almost exactly like normal! A word of warning: don't eat the raw dough. I usually love raw cookie dough, but the the raw chickpea dough is disgusting. Tasty once cooked, but disgusting when raw. Don't say I didn't warn you. I get chickpea flour from the import aisle at the Real Canadian Superstore-- it's a Loblaw's house brand, so it should be available across Canada.



V's Chicken Curry

Dad's chicken curry. Always a favourite. Add another chili pepper if you like a bit of fire in your curry. Serve with naan, roti, basmati rice, or rice pilaf, and raita's nice as well. Also consider some mango (or mixed) chutney. Consider cooking earlier in the day so that the flavours have a chance to mingle.



Raita (Indian yogurt dish)

Dad's Dal

Dal was one of my favourite dishes growing up. Recently I've rediscovered it, and I'm amazed at the nutrition it provides. Red lentils are about 1/3 protein, 1/3 fibre, and 1/3 complex carbs, and also include a wealth of vitamins and minerals. One variation on this recipe: eliminate the onions, and you can eliminate most of the oil.



Chinese Green Onion Pancakes

Chinese green onion (spring onion) pancakes, just like you'd find in a Chinese restaurant!



Chocolate Chip Cookies by Arjun

These chocolate chip cookies come out not too sweet, with a slight bitterness and saltiness. This recipe yields approx one dozen 3-inch round cookies. These cookies come out with a little crunch, and a little chewiness.



Low-Fat Rice Pudding

From one of the local newspapers (Richmond Review or Richmond News, I can't remember which), comes this tasty low-fat rice pudding recipe. I usually cook it with a rice cooker, but cooking it in a pot should also work.



Caesar Salad "Chez Bob's"

This supremely-tasty caesar salad consistently gets rave reviews from my friends, and they ask me to bring it to parties. I usually double this recipe so that I can have leftovers the next day (just don't add the extra sauce to the lettuce until you're ready to eat it, or the lettuce will go mushy).
