Technically speaking, this is the Carolyn's Spanish friend's recipe. But Carolyn is the one who typed it up and shared with me. So I decided to horner her in the title :) This recipe makes a big pie to share with your family members as a main dish. But with my limited cooking skill, I decided that this recipe may be too challenging. So I add my version and my tips as NOTEs. Be sure to use a good olive oil because the flavor defines the flavor of this dish. Hope you like it.
