Penne w/Roasted Chicken & Radicchio
Ingredients 1 Pound whole wheat penne pasta 1 heat radicchio, torn into 1" pie 1/2 Cup freshly grated parmesan cheese, 2 Teaspoons extra virgin olive oil 4 boneless skinless chicken breast 1/4 Cup balsamic vinegar freshly ground pepper to taste 1/4 Cup chopped walnuts
| Chicken and pasta dinner.
Directions
Cook pasta in a large pot of boiling water until just tender.
Drain pasta, reserving 1/4c of cooking liquid.
Place radicchio and the reserved liquid in the pot and cook over medium heat, stirring constantly, until wilted. Stir in the pasta, 2T Parmesan, oil, chicken, vinegar and pepper. Continue cooking until the cheese starts to melt.
Serve the pasta garnished with walnuts and remaining cheese.
