Ethiopian spiced ghee
Ingredients 1 Pound butter or soy margarine 4 Tablespoons onion, finely chopped 1 1/2 Tablespoons garlic, finely chopped 2 Teaspoons fresh ginger, minced 1/2 Teaspoon turmeric 4 green cardamom pods, crushed 1 Stick cinnamon 3 whole cloves 1/8 Teaspoon ground nutmeg
| Base for cooking many Ethiopian dishes. Use as oil for sauteing leafy greens.
Directions
Slowly melt the butter or soy margarine over low heat. Add the spices and let simmer at low heat for 20-30 minutes. Do not let it brown. Strain through cheesecloth and store in refrigerator.
