Ingredients


2 Tablespoons chopped fresh sage
6 garlic cloves minced or pressed
2 Tablespoons olive oil
2 1/2 Cups choped fresh or canned tomatoes (28-ounce can)
1 1/2 Tablespoons fresh lemon juice
3 Cups cooked cannellini beans (two 15-ounce cans, drained)
salt and pepper to taste


Fresh squeezed lemon juice and sage makes this bean salad pop with flavor.


Directions


Heat oil in saucepan, add minced garlic and sage, and cook until garlic is golden brown. Add tomatoes, lemon juice, and beans. Cook for 10 minutes. Add salt and pepper to taste. Serves well immediately or chilled for later.
