Ingredients

2 large chicken breast
Splash extra virgin olive oil
Dash of kosher salt
Dash of ground pepper
1 cup of orange peppers (or peppers of choice)
2 cups of asperagus cut up
4 servings of angel hair pasta cooked
Montery chicken seasoning
Fresh chopped basil to taste at least 2 tbsp.
2 large cloves of garlic minced
6 caprai tomatoes
1 cup feta
1/2 cup red onion chopped
1 cup mushrooms sliced

Directions

Season meat with montery chicken seasoning and salt and pepper to taste. Heat cast iron pan and flat iron chicken to medium well done. Slice chicken in stripes. The outside should be crisp and inside very juicy. Heat another large cast iron pan with olive oil. Once hot saute aspergarus, mushrooms, peppers, onion and garlic for about 4 minutes. Add in more olive oil, cooked pasta, basil, salt and pepper saute for about 2 minutes. Add in chicken to combine flavors for about 2 more minutes. Serve on plate and top with feta cheese. Enjoy with white wine.
