Greek-Style Bean Salad

Ingredients


1 10.5 oz. can small white beans, drained and rinsed.
1 large or 2 medium ripe tomatoes, cut into large dice
1 medium cucumber, peeled and chopped
1 tablespoon fresh oregano, chopped
1/3 cup crumbed feta cheese
3 tablespoons olive oil
1 tablespoon white wine vinegar
1/4 teaspoon salt
1/8 teaspoon freshly-ground black pepper
Pair this salad with Grilled Greek-Style Chicken Thighs. Be sure to use high-quality canned beans that are firm, not mushy. Add some canned tuna to any leftover salad for a quick (and good-for-you) lunch.


Directions


Combine all ingredients in a serving bowl and serve with Grilled Greek-Style Chicken Thighs.
