Thai Chicken on Skewers

Ingredients


4 boneless, skinless chicken breasts
1/2 cup chopped onion
2 tablespoons soy sauce
1 tablespoon lemon sauce (substitute lime juice for zestier flavor)
1 tablespoon vegetable oil
2 teaspoons light brown sugar
2 teaspoons chili powder
1 teaspoon ground coriander
1/2 teaspoon minced garlic
1/4 teaspoon ground ginger (substitute 2 teaspoons grated fresh ginger)
1 cup prepared peanut sauce
Delicious and easy. Serve over rice.


Directions


Soak skewers in water and preheat grill or broiler.

Cut chicken into 3x1/4" strips.

Combine onion, soy sauce, lemon juice, oil, brown sugar, chili powder, coriander, garlic and ginger in large bowl and mix.

Reserve 1/4 cup of the marinade for basting. Place chicken in bowl; let stand 15 minutes.

Remove chicken from marinade and thread chicken accordion style onto skewers.

Grill/broil 4 - 5 minutes per side; basting with each turn.

Serve with peanut sauce.
