Chicken Curry in a Hurry
Ingredients 1.5 T olive oil 1 small onion, sliced thinly 2.5 t. curry powder 1/2 C plain yogurt 3/4 C heavy cream 1/2 t kosher salt 1/4 t black pepper 1 14.5 oz can diced tomatoes, drained 1 rotisserie chicken 2 C cooked rice, basmati or jasmine 1/4 C fresh chopped cilantro
| Great curry dish when you have a rotisserie chicken lying around!!
Directions
Saute onion until soft in olive oil. Sprinkle with curry powder and cook for an additional 1 min. Add yogurt and cream and simmer gently for 3 min. Stir in salt, pepper, tomatoes, and any other cooked veggies (broccoli, red peppers, zucchini) Divide the rice and chicken among bowls and top with sauce and sprinkle with cilantro!
