Cajun Salmon with baby spinach

Ingredients


2 Tablespoons Cajun Spice (just use President’s Choice grinder mix or similar)
4 Salmon Fillets (120 grams each)
1 Clove garlic minced
2 Tablespoons Julienned shallots
500 grams whole grape tomato
450 grams of baby spinach
4 Tablespoons olive oil
Pinch blacl pepper and salt

Directions


Preheat oven to 350 degrees F (175 C). On baking tray, place grape tomatoes, seasoned with olive oil, salt and black pepper. Bake 15 minutes.

Sprinkle Cajun spice evenly over salmon. Add a pinch of pepper. Heat 2 tablespoons of olive oil in a skillet. Sear salmon for 2 minutes. finish in oven for about 6 to 8 minutes.

Saute shallots and garlic in a skillet for 2 minutes or until soft but not brown. Add roasted Tomatoes and spinach. Continue to saute until spinach is wilted. Serve over salmon.
