Ingredients


1 cucumber
2 medium tomatoes
1/2 medium white onion
2 Tablespoons parsley (more for garnish)
3 Tablespoons olive oil
1 Tablespoon red wine vinegar
1/8 Teaspoon dried oregano
salt to taste
pepper to taste
6 Ounces feta, cubed
8 Kalamata olives, pitted & halved


Horiatiki is a summer salad in Greek cuisine typically composed with tomatoes, cucumber, onion, Kalamata olives, and feta cheese. You can add sumac and toasted pita and serve it as Arabic 'fettoush'.


Directions


Peel and core the cucumber. Then, quartered lengthwise and thickly slice. Cut the tomatoes into 1/2 to 1 inch pieces. Thinly slice the onion. Roughly chop the 2 tablespoons parsley.

Whisk together oil, vinegar & oregano. Season to taste.

Combine the vegetables & parsley in a bowl, toss with dressing.

Top with the feta & olives. Garnish with the remaining parsley or fresh oregano.
