Red Lentil soup

Ingredients


4 cups vegetable stock (really nice if you make your own)
1/4 to 1/2 tsp red pepper flakes
3 Tbsp. lemon juice
1 1/3 cups red lentils
1 onion, chopped
3 shallots, chopped
salt and pepper to taste
Easy soup that's very tasty...you can substitute chicken stock for veggie stock if you don't want to do it vegan.


Directions


In a pot, saute the onion, shallots and red pepper flakes until soft.

Add the lentils, vegetable stock and salt and pepper and bring to a boil.

Reduce heat and simmer for approximately 30 minutes until lentils are somewhat mushy.

Take off heat, add lemon juice and adjust seasoning for taste if necessary.

You can garnish with sliced avocado, olives or a drizzle of olive oil.
