Ingredients


1/2 cup coconut milk
1 small garlic clove minced
1/4 teaspoon salt
1 teaspoon sugar
2 pounds (2 large or 3 medium sweet potatoes)peeled and quartered length wise, and cut crosswise into 1/4 inch slices.
pinch of black ground pepper
1 tablesspoon minced fresh cilantro leaves
delicious and different


Directions


mix coconut milk, garlic, redpepper flakes, salt, sugar, and sweet potatoes in 3 to 4 quart saucepan; cook covered over low heat, stirring occasionally, until potatoes are soft and fall apart, 35-45 minutes.

Turn heat off, mash sweet potatoes in saucepan with potato masher or transfer to food processor. Pour into heat resistant bowl to keep warm. Stir in pepper and cilantro and serve immediately
