Ingredients


2 10 ounce packages frozen spinach
2 cups herb stuffing mix, crumbled into small bits
1/2 cup grated parmesan or pecorino romano cheese
4 eggs
1 small onion, finely chopped
3/4 cup butter, melted
1/2 tsp each dried thyme, garlic powder, salt, pepper

Directions


Defrost spinach according to package instructions in the microwave and drain of excess water.

Beat the eggs.

Melt the butter.

Mix all ingredients together and form into bite size balls.

Chill in refrig for approximately 1 hour.

Place spinach balls on a cookie sheet and bake at 350 degrees for 15 to 20 minutes or until browned.
