Ingredients


2 T olive oil
1 small eggplant, halved and sliced
3/4 chopped onions
2 small zucchini sliced
1/4 cup sliced sundried tomatoes
1/4 T each salt and pepper
1 tube ready to heat polenta cut into 8 sliced
1 large tomato, cut into 8 sliced
1/2 c shredded part skim motzarella cheese
1 C marinara sauce, heated
