Ingredients


sugar (to coat glass rims)
1 lime wedge
1 Cup golden rum (not dark)
1/2 Cup fresh lime juice
1/3 Cup sugar
4 to 5 Cups ice cubes
12 Leaves fresh mint
4 Springs mint for garnish


A classic rum cocktail with hit of mint and lime. Light and refreshing. Triple the recipe for parties.


Directions


In a small soup bowl, place enough sugar to reach depth of 1/4 inch. Run the lime wedge around rim of 4 Martini glasses to moisten. Then, dip the rims into the sugar on the bowl.

In a blender, mix the rum, lime juice, and sugar until the sugar dissolves.

Add 4 cups of ice cubes. Blend until slushy and almost smooth. Add another cup of ice cubes, if desired.

Add the mint leaves and blend until small green flecks appear.

Pour into prepared glasses. Garnish with mint sprigs.
