Vegetarian Feijoada

Ingredients


1 Onion
1 Bell Pepper
2 Cloves garlic
1 Serrano or other hot pepper
1 Can (15 oz) or fresh diced tomatoes
1 Large can (27 oz) black beans
1 Tablespoon red wine vinegar
1 1/2 Teaspoon liquid smoke
1 Teaspoon cumin
1 Teaspoon thyme
1 Cup chopped spinach
Modified from the recipe by Solomon at chef2chef.net. Serve with rice, tortillas, corn bread, or other starch.


Directions


Dice onion, peppers, and garlic.

Sautee onion and bell pepper in olive oil in a medium saucepan about 5 minutes. Add garlic, hot pepper, and tomatoes and cook about 5 minutes more.

Add beans (including their liquid), vinegar, liquid smoke, spices, and salt and pepper to taste. Cover, lower heat, and simmer about 20 minutes. For thicker stew, cover only partially.

Add chopped spinach and simmer until ready to serve.
