Red Potato Salad
Ingredients 10 Cups Red Potatoes, Cubed 1 Green Bell Pepper, Chopped 1/2 Cup White Onion, Minced 1 Teaspoon Sugar 1/2 Cup Olive Oil 1/3 Cup Red Wine Vinegar 3 Tablespoons Dijon Mustard 2 Tablespoons Mayonaise 1 1/2 Teaspoons Salt 1/2 Teaspoon Pepper

Directions
Cook potatoes in boiling water for 12 minutes or until easily pierced with a fork. Drain and rinse under cold water.
In a large bowl, combine potatoes, bell pepper, onion and sugar.
In a small bowl, whisk together remaining ingredients and then mix it together with the potato mixture. Cover and refrigerate.
