Vegetarian "Meet"balls

Ingredients


4 eggs
2 cups colby cheese
3/4 cup pecan meal
2 tablespoons onion soup mix
1 cup breadcrumbs
1/2 cup parmesan cheese
2 cups vegetable broth
1 cup ketchup
1 cup water
1 cup brown sugar
soy sauce to taste

Directions


-Beat eggs.

-Thoroughly mix in cheese, pecans, onion soup mix, and breadcrumbs. If the consistency is too loose, add in more parmesan cheese or breadcrumbs.

-With butter or crisco on your hands, roll the mix into 1" balls (re-greasing as needed).

-Once all balls are formed, put on cookie sheet and bake at 350, rotating the balls as needed to form a well toasted meetball (this could take up to 45 minutes).

-Once the balls have cooked, bring the 2 cups of vegetable broth to a boil. Gently place all balls into the broth. Continue to simmer until all broth is absorbed (occasionally stir balls around to ensure equal coverage).

-The meetballs are now ready for enjoyment. You can either eat them as-is or place them in a sweet-n-sour sauce by combining the remaining ingredients or buying your favorite sauce. They can be refrigerated for at least a few days and do well in a crockpot filled with sauce.
