Mozzarella, Tomato and Basil Couscous Salad
Ingredients 2 Cups tomatoes (cherry or grape), halved 3/4 Cup fresh mozzarella cheese (or feta), diced 3 Tablespoons shallots, miced 2 Teaspoons olive oil 1/4 Teaspoon lemon juice or balsamic vinegar (champagne vinegar ok) 1/2 Teaspoon salt, to taste 1/4 Teaspoon fresh ground black pepper 1 Clove garlic, crushed and minced 1 Cup couscous, cooked 1/4 Cup fresh basil, chopped

Cold pasta salad with mozzarella cheese. I love to make this with leftover couscous.
Directions
In a large bowl, mix the tomato, mozzarella, shallots, olive oil, lemon juice, salt, pepper and garlic. Toss well. Refrigerate, covered, to marinate for 30 minutes.
Add the cooked couscous and chopped basil to the tomato mixture and toss.
