Slow Cooked Salmon with Ginger and Scallion

Ingredients


2 salmon fillets
salt and pepper
1 teaspoon Canola oil
1 teaspoon brown sugar
1 inch ginger, peeled and thinly sliced
4 spring onions, green parts sliced into 2 inch segments
1 spring onion, green part thinly sliced

Directions


Heat oven to 120C. Create bed of ginger in heavy backing dish, the spring onions, then salmon. Rub salmon with oil, a little salt and pepper.

Bake for 30 mins.
