Ingredients


1 Cup Quinoa (follow cooking instructions on label)
3 Tomatoes, chopped and diced
1/4 Cup fresh Parsley, minced
1/4 Cup fresh Mint, minced
3 cloves Garlic, minced
1 small Red Onion, diced
3-4 Tablespoon Olive Oil
Salt and Pepper to taste

Directions


Combine ingredients in bowl and toss gently.

Refrigerate for at least one hour, tossing occasionally. Served chilled.
