Garlic Scape Pesto
Ingredients 1 pound garlic scapes 1 cup grated parmesan cheese Olive oil (about 1/2 cup to 1 cup) Pine nutes (if available)
| This pesto uses garlic scapes when they are available in the spring. This pesto is definitely garlicky, so only garlic lovers should make. but it is good!!! can also keep stored in fridge for a week or you can freeze.
Directions
Chop the garlic scapes in 3 inch lengths. Put in the food processor and process until pureed. Add the parmesan and pine nuts and process until smooth. Slowly add the olive oil as the food processor runs and continue until all of the oil is combined into the garlic.
