Ingredients


1 Red Cabbage, large
1/4 Cup Butter
3 Tablespoons Brown Sugar
1/4 Cup Water
1/4 Cup Red Wine Vinegar
1 Teaspoon Salt
1 Teaspoon Nutmeg
1/4 Teaspoon Pepper
1 Apple, peeled, cored, chopped
Red Cabbage the way I like to make it


Directions


Shred the cabbage and put into a large pot with melted butter. Add the sugar, stir and cook gently for a few minutes. Do not let it brown. Add the water, vinegar, salt, pepper and nutmeg and cook very slowly for 1-1/2 hours. Add more sugar, salt, pepper or nutmeg as needed per taste if necessary. This is improved by making ahead and serving reheated.

Using red wine vinegar instead of white, brown sugar instead of white and nutmeg cuts down on the tartness of this dish so even those that don't care for it may like it.
