Ingredients

60 Grams (2 Ounces) Takokama (or sliced Kamaboko, Fish Sausage, Imitation Crab)
1 Tablespoon Sushi Vinegar (or Apple Vinegar)
2 Onions
1 Cucumber (or Celery)
1/3 Carrot
2 Tablespoon Mayo

If you can find ingredients, this is a very easy fulfilling salad which goes great with sake. I listed some alternative ingredients, which may be easier to find in the U.S. I used real crab meat for the picture just because I had them in my freezer. But imitation crab works well with this recipe, so don't waste your money.

Directions

In a bowl, place the Takokama and drizzle the sushi vinegar. Mix well. Set aside for a few minutes.

Meanwhile, slice the onion and the cucumber, and julienne the carrot. Soak the vegetable in cold water for 10 minutes. Drain and mix with the takokama mixture.

Add the mayo and mix well. Adjust the vinegar and mayo for your taste.
