Spinach Salad With Strawberries and Walnuts
Ingredients 2 Tbsp balsamic vinegar 3 Tbsp extra virgin olive oil 1 tsp Dijon mustard 2 tsp honey salt black pepper 5 oz. baby spinach, washed and dried 1/2 lb. fresh strawberries, hulled and sliced 1/3 cup walnut halves 1/4 lb. blue or soft goat cheese, pulled into small nuggets
| Directions
Place the vinegar, oil, mustard, honey, salt and pepper in a salad bowl and whisk to combine.
Add the spinach, strawberries, walnuts and cheese, and toss to coat, ensuring some of the strawberries, walnuts and cheese decorate the top, and then serve.
