Minty Yoghurt Chicken

Ingredients


2 chicken breasts
1 tbsp clear honey
2 tbsp lime or lemon juice
2 tbsp natural yoghurt
4 tbsp chopped fresh mint
black pepper to season

Directions


Chop the chicken into large pieces and slash with a knife.

Mix the honey, lime or lemon juice, natural yoghurt, half the chopped fresh mint and seasoning in a bowl. Mix in the chicken and leave to marinate for an hour or so.

Line a grill pan with foil and grill the chicken pieces under a moderately hot grill until thoroughly cooked and golden brown. Turn the chicken pieces occasionally.

Sprinkle with the remaining mint and serve immediately.
