Mini Pecan Pies
Ingredients 3 oz cream cheese, softened 1/2 c butter, softened 1 c sifted flour 2 eggs 2 T soft butter 1 cup brown sugar dash salt 2 tsp vanilla 1 cup chopped pecans
| 4 dozen mini pecan pies
Directions
Blend 1st 3 ingredients with pastry blender, chill 1 hour - roll into 1" balls and form into mini crusts in a mini muffin pan
Beat next ingredients with spoon & put 1 tsp. into each shell
Bake @ 350 for 15-20 minutes; reduce to 250 for 15-20 minutes until lightly browned
