Soda Bread
Ingredients 1 3/4 Cups flour 1/2 Tablespoon sugar 1/2 Teaspoon salt 1/2 Teaspoon baking soda 1 Teaspoon caraway seeds, fennel seeds, or rosemary etc. 2 Tablespoons butter, room temperature 1/2 Cup milk 1/4 Cup yogurt 1/2 Tablespoon white vinegar

Super-quick soda bread; half-loaf recipe with milk & yogurt subbed in for buttermilk, with lots of possible recipe variations
Directions
Preheat oven to 450 degrees F.
In large bowl, mix flour, sugar, salt, baking soda, and caraway seeds (or other flavoring).
Mix butter into dry ingredients until resembles coarse meal (using fingers or fork).
Mix milk, yogurt and vinegar, and pour into a "crater" in flour mixture. Mix very gently (fold in) until just combined. Roughly shape as a loaf, and cut "cross" about 1.5 inches deep to allow deeper cooking.
Place on lightly greased cooking tray and cook for 15 minutes at 450 degrees F. Then, lower the heat to 400 degrees F and cook for another 15-25 minutes until done (sounds hollow when knocked on bottom). Let cool for about 15 minutes & enjoy!
