whole wheat bread with amaranth flour and flax

Ingredients


1 1/4 c skim milk, room temperature
1 Tbsp olive oil
2 Tbsp flax seeds, ground
1 tsp. salt
3 Tbsp honey
2 1/2 c. whole-wheat flour
1/2 c. amaranth flour
1/4 c. wheat gluten
1 1/2 tsp. active dry yeast
1 cup raisins, nuts, etc. (optional)

Directions


Add ingredients to bread-maker in order listed. Mix flours together before adding to wet ingredients to ensure that gluten is evenly distributed.

If using raisins or nuts, wait until dough is mixed thoroughly before adding.

Use rapid whole wheat setting on bread-maker and let it do the rest.

Makes 1.5 lb. loaf.
