Ayam Masak Merah
Ingredients 1 Chicken (whole) 8 Cloves Garlic 20 Grams Ginger (1 inch) 2 Tablespoons Oil (for shallow frying) 1 Stick Cinnamon 4 Cloves 4 Cardamon pods 1 Tablespoon Chili powder 3 Tablespoons Tomato paste Salt (to taste) Sugar (to taste) 1 Onion (large; cut into rings) Coriander leaves (garnish; optional) Cooked rice (optional)

This spicy chicken dish can be found in Malay food eateries. It goes very well with rice.
Directions
Cut the chicken into 8 pieces (You can use other parts such as drumsticks if you wish).
Mince the garlic and ginger. Mix them and marinate the chicken pieces.
Heat oil in wok.
Fry the dried spices (cinnamon, cloves, and Cardamon pod) & add the marinated chicken. Turn to brown.
Add the chili powder & tomato paste and mix well. Add water to thin the paste a little.
Add the onion rings.
Add the salt & sugar to taste and cook until chicken is cooked.
Garnish with fresh coriander leaves & served with steamed rice.
