Turkish Delight
Ingredients 2 Kilograms Sugar 6 Oranges 2 Lemons 38 Leafs Gelatine ( 5g each )

Grate zest and juice oranges and lemons. Top up liquid so that you have a pint and half with extra orange juice ( carton will do ). Add half the sugar and boil.
Soften gelatin in water, drain and then add to pan with rest of the sugar and bring back to the boil to melt the gelatin and sugar. Allow to cool slightly.
Line a tray with parchment paper and then a 50/50 mixture of cornflour and icing sugar. Pour turkish delight mixture into tray and allow to set. When set, cut into cubes and toss in the 50/50 mixture so that they don't stick together.
Store in a dry air tight container with the cornflour and icing sugar mixture.
