Roasted Tomatillo Guacamole (low fat)

Ingredients


8 tomatillos
2 garlic cloves
1/4 Cup red onion, chopped large pieces
1 jalapeno, seeded and halved
1 avocado, peeled and quartered
1/4 Cup cilantro (or 1 small bunch)
juice of 1/2 fresh lime
salt & pepper to taste

Directions


Remove papery husks from tomatillos. Broil tomatillos in oven on baking sheet until slightly charred. Let cool. Food process garlic, onions and pepper. Add remaining ingredients and pulse a few times.
