Ingredients


2 Cups beans, soaked at least 12 hours
1/2 stalk celery
1/2 carrot
1 Turkish bay leaf
1/2 onion
2 Teaspoons kosher salt
a bit of oil
1/3 Cup olive oil
Cup lime juice
1 small red onion, minced
chopped cilantro
Teaspoon cumin
1 Teaspoon chile powder
pepper
Bean salad


Directions


Tie celery, carrot, thyme, parsley and bay leaf together. Combine water, beans, onion, tied ingredients. Add a bit of oil Bring to simmer, partially cover, cook 1-2 hours, till soft. Don't boil! After 1/2 hour, add 2t Kosher salt. Add water when needed. Drain, immediately toss eith 1/3c olive oil, 1/3c lime juice. Add small red onion, minced, chopped cilantro, 1t ground cumin, 1t chili powder. Toss, chill, taste, add salt, pepper.
